Gluten can be understood as a combination of various natural proteins, which is mainly found in wheat and to a lesser level in barley and rye. Gluten is mainly developed when flour is moistened and is mixed or kneaded afterwards.  Gluten is a protein mainly found in wheat and is known to create leavening upon being cooked properly. It is mainly included in food in order to boost the protein content and can also be used as a substitute of meat.

Some of the highest content gluten food items are the ones that are made from grains. Wheat, barley and rye are grains containing the maximum amount of gluten. Examples of this type of food would be bread, cakes, pasta, pastries, and crackers.

Fruits and Vegetables

Fresh fruit and vegetables do not have gluten content.  However, in canned, frozen or chemically prepared fruits and vegetables gluten can be found.


Gluten does appear in many commercially available snacks.  These items are generally made with wheat flour and food starch.   Gluten adds flavor to food.  Examples of snacks high in gluten would be:  Peanut butter, chocolate, candies, ice cream and muffins.


The beverages made from malt, wheat, rye, oats and barley contain high amounts of gluten.  Drinks such as beer are very high in gluten.

Processed Food

In processed foods, gluten is mainly added to increase the flavor of the food items. Seasoning items like soy sauce, mustard, vinegar, tamarind and bouillon contain gluten. Processed meats like hot dogs, sausages, and bologna are also rich in gluten.
